You'll Love This Crazy Good Little Apricot Peach Dessert

Light and refreshing, 'You'll Love this Crazy Good Little Apricot Peach Dessert!' This little Apricot Peach No Bake Mini Dessert is easy, too! These mini desserts are displayed in mini goblets but could also be served in 12 of the mini shot glasses or one of the smaller mini dessert glasses.

This little dessert was aimed at pleasing eight-year old Sophia. She loves peaches. There was a can of sliced peaches in the pantry. There are several boxes of JELL-O in the pantry, but the closest thing to peach was apricot. That is why this is not a 'Peach No Bake Mini Dessert'!

Apricot and peach flavors go well together anyway. Isn't it interesting that the powdered JELL-O completely dissolves into the cream cheese?

 

Apricot Peach No Bake Mini Dessert

3/4 cup crushed Vanilla Wafers*

2 Tblsp. melted Butter

3 Tblsp. Sugar

1- 8-ounce block Cream Cheese

1 - 3-ounce pkg Apricot flavored JELL-O

1 cup chopped peaches (1 - 15-ounce can drain and reserve

1 small peach slice for each of the 6 individual desserts)

1 - 8-ounce container of Cool Whip ( Only 6 ounces are needed)

Combine the crushed vanilla wafers, the 3 tablespoons of sugar, and the melted butter. Mix together well Divide evenly among the six mini dessert glasses. (About 2 1/2 tsp. each for the goblet glasses.) Press the cookie layer down in the bottom of each little glass.

Mix the softened cream cheese and the powdered JELL-O with a mixer until completely blended. (The electric hand mixer works well for this but be sure the cream cheese is softened. Tip*** Forgot to set the block of cream cheese out to soften? Don't worry! To soften cream cheese, completely unwrap the package of cream cheese and place in a glass bowl. Discard the wrapper. Microwave on high for 10 seconds just until softened.)

Add the chopped peaches and 3/4 of the 8-ounce container of Cool Whip. (Divide the container in half with a knife. Then divide those halves in half, making a cross in the cool whip. Each of the 4 sections should be 2 ounces. Scoop out three of the four sections.)

Fold the Cool Whip in completely.

Using a large decorator bag with a large round tip, pipe the cream cheese mixture into the glasses. (Spooning these into the glasses is not as easy or neat as piping. Trust me, I have tried it!)

Garnish with the peach slices. Cut each slice into 3 pieces. Refrigerate for a couple of hours before serving.

* You can add a couple of tablespoons of ground almonds to the vanilla wafers to equal the 3/4 cup if you like a slightly nutty flavor. You'll notice I do this in a lot of the desserts with a crumbled crust.

 

Surprisingly, Aidan wolfed this dessert down faster than Sophia! They both agreed it was pretty yummy. After they finished these little desserts, they instructed me to make a dessert with blueberries for next week! To pin this ► click here.
